Scrumptious Rendang: Beef or Chicken
Ingredients:
- 1 kg beef or chicken, cut into small cubes
- 2 cans of coconut milk
- 5 shallots
- 5 cloves of garlic
- 5 red chillies
- 3 lemongrass stalks
- 1 tsp tamarind paste
- 2 tsp salt
- 1 tsp sugar
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 3 kaffir lime leaves
- 3 bay leaves
Instructions:
- In a blender, blend shallots, garlic, red chillies, lemongrass, and tamarind paste into a paste.
- In a large pot, heat some oil and sauté the paste until fragrant. Add in the beef or chicken and continue to cook until the meat is browned.
- Add in the coconut milk, salt, sugar, turmeric powder, coriander powder, cumin powder, kaffir lime leaves, and bay leaves. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low and let it simmer for 2-3 hours, or until the meat is tender and the sauce has thickened.
- Serve with steamed rice and enjoy your delicious Rendang!
Tips:
- For a spicier version, add more red chillies to the paste.
- For a milder version, remove the seeds from the red chillies before blending.
- You can also add some chopped up carrots and potatoes to the pot for some extra sweetness and texture.
