Scrumptious Rendang: Beef or Chicken

Ingredients:

  • 1 kg beef or chicken, cut into small cubes
  • 2 cans of coconut milk
  • 5 shallots
  • 5 cloves of garlic
  • 5 red chillies
  • 3 lemongrass stalks
  • 1 tsp tamarind paste
  • 2 tsp salt
  • 1 tsp sugar
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 3 kaffir lime leaves
  • 3 bay leaves

Instructions:

  1. In a blender, blend shallots, garlic, red chillies, lemongrass, and tamarind paste into a paste.
  2. In a large pot, heat some oil and sauté the paste until fragrant. Add in the beef or chicken and continue to cook until the meat is browned.
  3. Add in the coconut milk, salt, sugar, turmeric powder, coriander powder, cumin powder, kaffir lime leaves, and bay leaves. Stir to combine.
  4. Bring the mixture to a boil, then reduce heat to low and let it simmer for 2-3 hours, or until the meat is tender and the sauce has thickened.
  5. Serve with steamed rice and enjoy your delicious Rendang!

Tips:

  • For a spicier version, add more red chillies to the paste.
  • For a milder version, remove the seeds from the red chillies before blending.
  • You can also add some chopped up carrots and potatoes to the pot for some extra sweetness and texture.
