Savory Samosa: North Indian Snack

Method:

  1. For the dough:
    1. In a large bowl, mix together the flour, salt, and ajwain seeds. Add the oil and mix until the mixture resembles coarse sand.
    2. Add 4-6 tablespoons of water to the bowl, a tablespoon at a time, and mix until the dough comes together in a ball. Knead the dough for 2-3 minutes until smooth and elastic.
    3. Cover the bowl with a damp cloth and let the dough rest for 30 minutes.
  2. For the filling:
    1. In a large pan, heat the oil over medium heat. Add the onion and cook for 5-7 minutes until tender and translucent.
    2. Add the garlic and ginger to the pan and stir-fry for 30 seconds until fragrant.
    3. Add the paprika, garam masala, cumin, coriander, turmeric, and salt to the pan and stir to combine.
    4. Add the diced potatoes and frozen peas to the pan and stir to combine. Cook for 5-7 minutes until the vegetables are tender.
  3. To assemble the samosas:
    1. Divide the dough into 8-10 equal portions and roll each portion into a ball.
    2. On a lightly floured surface, roll each dough ball into a thin circle.
    3. Cut each circle in half to form two semicircles.
    4. Brush the straight edge of each semicircle with water.
    5. Fold the semicircle in half to form a cone, pressing the moistened edges together to seal.
    6. Fill the cone with 2-3 tablespoons of the filling mixture and press the top of the cone together to seal.
    7. Repeat the process with the remaining dough and filling mixture.
    8. Heat oil in a large pan over medium heat. Fry the samosas in the hot oil for 3-4 minutes on each side until golden brown and crispy.
    9. Drain the samosas on a paper towel to remove any excess oil.
    10. Garnish with cilantro and serve hot with chutney or mint sauce.
