Savory Malaysian Popiah Spring Rolls

Ingredients:

  • 10 spring roll wrappers
  • 1/2 cup julienned carrots
  • 1/2 cup julienned cucumber
  • 1/2 cup julienned turnip
  • 1/2 cup julienned bean sprouts
  • 1/2 cup shredded lettuce
  • 1/2 cup cooked and shredded jicama
  • 1/2 cup cooked and shredded sweet potato
  • 1/2 cup chopped peanuts
  • 2 tablespoons hoisin sauce
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil

Instructions:

  1. In a large mixing bowl, combine all the julienned vegetables, shredded lettuce, jicama, sweet potato, and peanuts.
  2. In a small mixing bowl, whisk together the hoisin sauce, sweet chili sauce, soy sauce, and sesame oil. Pour the sauce over the vegetable mixture and toss to evenly coat.
  3. Place a spring roll wrapper on a clean surface and place 2 tablespoons of the vegetable mixture in the center of the wrapper. Roll the wrapper tightly, tucking in the sides as you go, to form a cylinder-shaped spring roll.
  4. Repeat with the remaining wrappers and vegetable mixture.
  5. Heat a large skillet over medium heat and add the spring rolls to the pan. Cook until they are golden brown on all sides, about 5-7 minutes.
  6. Serve the spring rolls hot with additional hoisin sauce or sweet chili sauce for dipping.
