North Indian Aloo Matar

Ingredients:

Method:

  1. Boil the potatoes in a large pot of water until they are soft and tender, about 15-20 minutes. Drain and set aside.
  2. In a large pan, heat the oil over medium heat. Add the cumin seeds and let them sizzle for 30 seconds.
  3. Add the chopped onions to the pan and cook until they are golden brown, about 5-7 minutes.
  4. Add the ginger paste, garlic paste, green chilies, and chopped tomatoes to the pan and cook until the tomatoes are soft and mushy, about 5-7 minutes.
  5. Add the coriander powder, turmeric powder, garam masala, and salt to the pan and stir to combine.
  6. Add the green peas and boiled potatoes to the pan and stir to combine with the sauce.
  7. Add 1 cup of water to the pan and stir to combine. Bring the mixture to a boil, reduce the heat to low, cover the pan with a tight-fitting lid, and let the Aloo Matar simmer for 10-12 minutes or until the sauce has thickened and the flavors have combined.
  8. Remove the pan from heat and serve hot with roti, naan, or rice.
