Malaysian Hokkien Mee Recipe

Ingredients:

  • 1 pound fresh noodles (preferably Hokkien or egg noodles)
  • 1 pound shrimp, peeled and deveined
  • 1 pound sliced pork belly
  • 1/2 cup sliced onion
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp dark soy sauce
  • 1 tsp light soy sauce
  • 1 tsp sesame oil
  • 1/4 tsp white pepper
  • 1/2 cup chicken broth
  • 1/2 cup water
  • 2 tbsp cooking oil
  • For garnish:
    • Cilantro leaves
    • Lime wedges
    • Sambal chili sauce

Instructions:

  1. In a large wok or frying pan, heat the cooking oil over high heat. Add the garlic and onion, and stir-fry for 1-2 minutes, until fragrant.
  2. Add the sliced pork belly and shrimp to the wok, and stir-fry for another 2-3 minutes, until the shrimp are pink and the pork is browned on both sides.
  3. Add the salt, sugar, dark soy sauce, light soy sauce, sesame oil, and white pepper to the wok, and stir to combine.
  4. Add the chicken broth, water, and noodles to the wok, and stir to mix everything together. Let the mixture come to a boil, then reduce the heat to low and cover the wok with a lid. Simmer for 5-7 minutes, until the noodles are cooked and the sauce has thickened slightly.
  5. Serve the Hokkien Mee hot, garnished with cilantro leaves, lime wedges, and sambal chili sauce, if desired.

Tips:

  • For a more authentic flavor, use fresh Hokkien noodles or egg noodles instead of dried noodles.
  • For a spicy version, add more sambal chili sauce to taste.
