Malaysian Claypot Chicken Rice
When it comes to Malaysian cuisine, Claypot Chicken Rice is a must-try dish. Its savory, fragrant and comforting flavors have made it a staple for locals and a popular choice for tourists visiting Malaysia. The dish is made by cooking rice and chicken in a traditional claypot over an open flame, which imparts a unique, smoky flavor and aroma to the dish. With its tender and juicy chicken, fluffy and flavorful rice, and a range of aromatic spices, this dish is a true explosion of flavors in your mouth.
Ingredients:
- 1 pound boneless, skinless chicken thighs
- 1 cup jasmine rice
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon dark soy sauce
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- 1/2 cup chicken broth
- 1/4 cup chopped scallions
- 2 tablespoons cooking oil
Instructions:
- In a bowl, mix together the chicken, garlic, ginger, soy sauce, oyster sauce, sesame oil, dark soy sauce, sugar, salt, and white pepper. Marinate for at least 30 minutes.
- In a claypot, heat the cooking oil over medium heat. Add the marinated chicken and cook for about 5 minutes, until browned on both sides.
- Add the rice to the claypot and stir to combine with the chicken. Pour in the chicken broth and bring the mixture to a boil.
- Reduce heat to low, cover the claypot, and let the rice cook for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
- Stir in the chopped scallions and cook for another 2-3 minutes, until fragrant.
- Serve the Claypot Chicken Rice hot, garnished with additional scallions, if desired.
Tips:
- Make sure to use a traditional claypot for this dish, as it imparts a unique smoky flavor that cannot be replicated by other types of cooking vessels.
- If you do not have a claypot, you can also use a cast iron skillet or a heavy-bottomed pot instead.
- For an extra boost of flavor, you can add sliced mushrooms or other vegetables to the claypot along with the chicken and rice.
