Malaysian Ayam Percik: Grilled Chicken

Ingredients:

  • 1 kg chicken, cut into pieces
  • 2 tbsp oil
  • 2 tbsp turmeric powder
  • 1 tsp salt
  • 1 tsp sugar
  • For the marinade:
    • 5 shallots
    • 5 cloves of garlic
    • 5 red chillies
    • 1 tsp shrimp paste
    • 1 tsp sugar
    • 1 tsp salt
    • 1 cup coconut milk

Instructions:

  1. In a blender, blend the shallots, garlic, red chillies, shrimp paste, sugar, and salt into a paste.
  2. In a bowl, mix together the chicken, oil, turmeric powder, salt, sugar, and marinade paste. Add the coconut milk and stir to combine.
  3. Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 2 hours, or overnight for best results.
  4. Preheat your grill to high heat. Thread the marinated chicken onto skewers and brush with some of the remaining marinade.
  5. Grill the chicken for 8-10 minutes on each side, or until fully cooked through and charred on the outside.
  6. Serve the Ayam Percik hot with rice and a side of vegetables, if desired.
