Malaysian Assam Pedas Fish Curry

Ingredients:

  • 1 kg fish, cut into large pieces
  • 2 tbsp oil
  • 5 shallots
  • 5 cloves of garlic
  • 5 red chillies
  • 3 lemongrass stalks
  • 1 tsp tamarind paste
  • 2 tsp salt
  • 1 tsp sugar
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 can of coconut milk
  • 1 cup water

Instructions:

  1. In a blender, blend shallots, garlic, red chillies, lemongrass, and tamarind paste into a paste.
  2. In a large pot, heat the oil and sauté the paste until fragrant. Add in the fish and continue to cook for 2-3 minutes on each side, or until the fish is browned.
  3. Add in the coconut milk, water, salt, sugar, turmeric powder, coriander powder, and cumin powder. Stir to combine.
  4. Bring the mixture to a boil, then reduce heat to low and let it simmer for 10-15 minutes, or until the fish is cooked through and the sauce has thickened.
  5. Serve with steamed rice and enjoy your delicious Assam Pedas Fish Curry!

Tips:

  • For a spicier version, add more red chillies to the paste.
  • For a milder version, remove the seeds from the red chillies before blending.
  • You can also add some sliced okra or eggplant to the pot for some extra texture and flavor.
