Malaysian Assam Pedas Fish Curry
Ingredients:
- 1 kg fish, cut into large pieces
- 2 tbsp oil
- 5 shallots
- 5 cloves of garlic
- 5 red chillies
- 3 lemongrass stalks
- 1 tsp tamarind paste
- 2 tsp salt
- 1 tsp sugar
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 can of coconut milk
- 1 cup water
Instructions:
- In a blender, blend shallots, garlic, red chillies, lemongrass, and tamarind paste into a paste.
- In a large pot, heat the oil and sauté the paste until fragrant. Add in the fish and continue to cook for 2-3 minutes on each side, or until the fish is browned.
- Add in the coconut milk, water, salt, sugar, turmeric powder, coriander powder, and cumin powder. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low and let it simmer for 10-15 minutes, or until the fish is cooked through and the sauce has thickened.

- For a spicier version, add more red chillies to the paste.
