Easy Malaysian Nasi Goreng

Ingredients:

  • 2 cups cooked rice
  • 1 tbsp oil
  • 1 onion, sliced
  • 1 garlic clove, minced
  • 2 carrots, sliced
  • 2 eggs, beaten
  • 1 tsp soy sauce
  • 1 tsp kecap manis (sweet soy sauce)
  • 1 tsp sambal oelek (chili paste)
  • 1 tsp salt
  • 1 tsp sugar
  • 1 green onion, sliced (optional)

Instructions:

  1. Heat the oil in a large pan over medium heat. Sauté the onion and garlic until softened and fragrant, about 3 minutes.
  2. Add the carrots and stir fry for another 2 minutes.
  3. Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until cooked, then mix them together with the vegetables.
  4. Add the cooked rice to the pan and stir to combine with the vegetables and eggs. Stir in the soy sauce, kecap manis, sambal oelek, salt, and sugar.
  5. Continue to stir fry until the rice is heated through and evenly coated with the sauce, about 5 minutes.
  6. Garnish with sliced green onion, if desired, and serve hot with additional soy sauce, kecap manis, or sambal oelek on the side.

Tips:

  • For a vegetarian version, omit the eggs and use tofu or tempeh instead.
  • For a spicier version, add more sambal oelek to taste.
  • For a more authentic Malaysian flavor, add some sliced shrimp or diced chicken to the pan before adding the rice.
