Delicious North Indian Biryani

  • 1 cup water

Method:

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion and cook for 5-7 minutes until tender and translucent.
  2. Add the garlic and ginger to the pot and stir-fry for 30 seconds until fragrant.
  3. Add the paprika, garam masala, cumin, coriander, turmeric, and salt to the pot and stir to combine.
  4. Add the chicken to the pot and cook for 5-7 minutes until browned on all sides.
  5. Add the diced tomatoes, frozen peas, diced carrots, and water to the pot and bring to a boil. Reduce the heat and let the mixture simmer for 10-15 minutes until the vegetables are tender.
  6. Meanwhile, rinse the basmati rice in cold water several times and then soak in water for 15 minutes.
  7. Drain the rice and add it to the pot with the chicken and vegetable mixture. Stir to combine and then cover the pot with a lid.
  8. Let the biryani simmer over low heat for 15-20 minutes, or until the rice is fully cooked and the liquid has been absorbed. Fluff the rice with a fork and then garnish with cilantro before serving.
