Delicious Malaysian Murtabak

Murtabak is a popular street food in Malaysia, and for good reason. The savory, crispy exterior and the soft, fluffy interior make it a staple food for locals and visitors alike. This dish is made from a thin layer of dough that is filled with a mixture of spices, meat, and vegetables, then fried to perfection. In this article, we'll be sharing with you the recipe for a classic Malaysian murtabak.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon active dry yeast
  • 1/2 cup warm water
  • 1/2 teaspoon oil
  • 1/2 pound ground beef
  • 1 onion, chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon curry powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 egg
  • 1/2 cup chopped green onions
  • Oil for frying

Instructions:

  1. In a large bowl, mix together the flour, salt, sugar, and yeast. Add the warm water and oil and mix until a dough forms. Knead the dough for 10 minutes until it's smooth and elastic. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise for an hour.
  2. In a pan, brown the ground beef over medium heat. Add the chopped onion, minced garlic, curry powder, coriander, cumin, paprika, turmeric, salt, and sugar. Cook for 5 minutes until the mixture is fragrant and the onions are soft.
  3. In a large bowl, beat the egg and green onions together. Stir in the beef mixture and mix well.
  4. Divide the dough into 8 equal portions. Roll each portion out into a thin circle. Place 2 tablespoons of the beef mixture in the center of each circle. Fold the edges of the dough up and over the filling, sealing the edges to form a pocket. Repeat with the remaining dough and filling.
  5. Heat the oil in a deep pan over medium heat. Fry the murtabak for 3-4 minutes on each side, or until they're golden brown and crispy. Serve hot with a side of your favorite chutney or dipping sauce.

Tips:

  • You can use chicken, lamb, or any other type of ground meat in place of the beef if you prefer.
  • For a spicier murtabak, add more spices or a pinch of chili powder to the filling mixture.
