Delicious Dosa: South Indian Staple

Ingredients:

  • 2 cups raw rice
  • 1 cup urad dal (split black gram)
  • 1/4 cup cooked rice
  • 1/2 tsp fenugreek seeds
  • Water, as needed

Instructions:

  1. Wash and soak the raw rice, urad dal, and fenugreek seeds in separate bowls for at least 6 hours.
  2. Drain the water from the soaked ingredients. Blend the urad dal with a little water until it forms a smooth, thick paste. Transfer to a large bowl.
  3. Blend the raw rice, cooked rice, and fenugreek seeds with a little water until smooth. Add this mixture to the urad dal paste and mix well. The batter should have a thick, pouring consistency. Add more water if necessary.
  4. Allow the batter to ferment for 8-12 hours or overnight in a warm place. Once fermented, the batter will become bubbly and double in volume. Add salt to taste and mix well.
  5. Heat a non-stick dosa pan or griddle over medium heat. Lightly grease the pan with oil. Pour a ladleful of batter in the center of the pan and spread it quickly in a circular motion to form a thin, even layer.
  6. Drizzle a little oil around the edges of the dosa and cook until the underside is golden brown and the edges start to lift. Flip the dosa and cook the other side for a few seconds.
  7. Remove the dosa from the pan and fold it in half. Serve hot with coconut chutney, sambar, or your favorite accompaniment.
