Sweet and Savory Crepes

Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 tsp salt
  • 2 tbsp unsalted butter, melted

Instructions:

  1. In a large mixing bowl, whisk together the flour, eggs, milk, water, salt, and melted butter until smooth. The batter should have the consistency of heavy cream.
  2. Heat a non-stick pan over medium heat. Lightly coat the pan with cooking spray or additional melted butter.
  3. Pour 1/4 cup of batter into the center of the pan and swirl to evenly coat the bottom of the pan. Cook for 2-3 minutes, or until the edges start to brown and the top of the crepe is set.
  4. Carefully flip the crepe and cook for an additional 1-2 minutes on the other side.
  5. Repeat with the remaining batter, stacking the cooked crepes on a plate as you go.
