Vegetarian Main Course Ideas

Tofu Stir-Fry
Ingredients:
- 1 block of firm tofu, drained and pressed
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 1 cup of sliced mushrooms
- 1/2 cup of sliced carrots
- 1/2 cup of snap peas
- 1 tbsp of sesame oil
- 2 tbsp of soy sauce
- 1 tbsp of cornstarch
- 1 tsp of ginger
- 1 clove of garlic, minced
- 1 tsp of sugar
Instructions:
- Cut the tofu into 1 inch cubes and set aside.
- In a large wok or pan, heat the sesame oil over medium heat. Add the sliced red bell pepper, yellow onion, mushrooms, carrots, snap peas, and minced garlic. Cook until the vegetables are tender, about 5 minutes.
- Add the cubed tofu to the pan and cook until lightly browned, about 5 minutes.
- In a small bowl, whisk together the soy sauce, cornstarch, sugar, and ginger. Pour the mixture over the tofu and vegetables and stir until the sauce has thickened, about 2 minutes.
- Serve the tofu stir-fry over a bed of rice and enjoy!
