Stuffed Bell Peppers

These stuffed bell peppers are a classic recipe that are always a crowd-pleaser. The tender bell peppers are filled with a mixture of rice, ground beef, and vegetables, making them a complete meal in one dish.

Ingredients:
  • 4 large bell peppers
  • 1 cup long grain rice
  • 2 cups water
  • 1 lb. ground beef
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 cup grated cheddar cheese
Instructions:
  1. Preheat the oven to 375°F.
  2. In a medium pot, bring the water to a boil and add the rice. Reduce heat and let simmer for 18-20 minutes or until the rice is tender and the water has been absorbed.
  3. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess grease.
  4. Stir in the onion, garlic, diced tomatoes, basil, oregano, salt, and pepper. Let simmer for 5 minutes or until the vegetables are tender.
  5. Stir in the cooked rice and remove from heat.
  6. Cut the tops off of the bell peppers and remove the seeds and membranes. Fill each pepper with the beef and rice mixture.
  7. Place the stuffed peppers in a baking dish and bake for 25-30 minutes or until the peppers are tender and the cheese is melted and bubbly.
