- 1 cup of beef broth
- 1 tablespoon of tomato paste
- 1 bay leaf
Instructions:
- In a large bowl, whisk together the flour, salt, pepper, thyme, and rosemary. Add the beef cubes and toss to coat evenly.
- In a large skillet, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides, about 5-7 minutes.
- Remove the beef from the skillet and set aside. In the same skillet, add the onion and garlic and cook until softened, about 5 minutes.
- Add the red wine to the skillet and cook for 2-3 minutes, or until reduced by half. Stir in the beef broth, tomato paste, and bay leaf.
- Return the beef to the skillet and bring the mixture to a simmer. Reduce heat to low and cover the skillet. Let cook for 30-35 minutes, or until the beef is tender and the sauce has thickened.
- Remove the bay leaf and serve the beef over mashed potatoes, rice, or crusty bread.
