Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs. In the breadcrumb mixture, add the parmesan cheese, basil, oregano, garlic powder, onion powder, salt, and pepper. Stir to combine.
- Dredge each chicken breast in the flour, shaking off any excess. Dip in the beaten eggs, then coat in the breadcrumb mixture, pressing the breadcrumbs firmly onto the chicken.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts to the skillet and cook for 3-4 minutes on each side, or until golden brown.
- Place the chicken on the prepared baking sheet. Top each chicken breast with marinara sauce and shredded mozzarella cheese.
- Bake for 15-20 minutes, or until the cheese is melted and the chicken is cooked through.
- Serve hot with a side of pasta or a mixed greens salad.
