Vegetarian Tacos
Ingredients:
- 1 can black beans, drained and rinsed
 - 1 red bell pepper, diced
 - 1 yellow onion, diced
 - 2 cloves garlic, minced
 - 1 tablespoon chili powder
 - 1 teaspoon cumin
 - 1/2 teaspoon smoked paprika
 - 1/2 teaspoon sea salt
 - 1 avocado, diced
 - 1/2 cup cherry tomatoes, halved
 - 1/2 cup shredded lettuce
 - 1/4 cup cilantro, chopped
 - 8-10 corn tortillas
 - 1 lime, cut into wedges
 
Instructions:
- In a large pan, heat a little oil over medium-high heat. Add the red bell pepper, yellow onion, and garlic and sauté until the vegetables are tender, about 5-7 minutes.
 - Stir in the black beans, chili powder, cumin, smoked paprika, and salt. Cook for 2-3 minutes until the beans are heated through and the spices are fragrant.
 - Warm the tortillas in a dry pan over medium heat, about 30 seconds on each side, until they are soft and pliable.
 - To assemble the tacos, place a few spoonfuls of the black bean mixture onto each tortilla. Top with diced avocado, cherry tomatoes, shredded lettuce, and chopped cilantro.
 - Squeeze a little lime juice over the tacos and serve immediately.
