Ratatouille

Ingredients:

  • 1 large eggplant, chopped into 1-inch pieces
  • 2 large zucchinis, chopped into 1-inch pieces
  • 2 bell peppers, any color, chopped into 1-inch pieces
  • 2 large tomatoes, chopped into 1-inch pieces
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1/4 cup olive oil
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh parsley (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the chopped eggplant, zucchinis, bell peppers, tomatoes, onion, and garlic. Drizzle with olive oil and mix well to evenly coat the vegetables.
  3. In a small mixing bowl, whisk together the basil, thyme, oregano, salt, and pepper. Sprinkle the spice mixture over the vegetables and mix well to evenly distribute the spices.
  4. Pour the mixture into a 9x13 inch (23x33 cm) baking dish and spread it out evenly. Cover the dish with foil and place it in the oven.
  5. Bake for 45 minutes, then remove the foil and bake for an additional 15-20 minutes, or until the vegetables are tender and lightly browned.
  6. Remove the dish from the oven and let it cool for a few minutes. Sprinkle with fresh parsley, if desired, and serve hot.
