Ratatouille
Ingredients:
- 1 large eggplant, chopped into 1-inch pieces
- 2 large zucchinis, chopped into 1-inch pieces
- 2 bell peppers, any color, chopped into 1-inch pieces
- 2 large tomatoes, chopped into 1-inch pieces
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 1/4 cup olive oil
- 1 tsp dried basil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chopped fresh parsley (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the chopped eggplant, zucchinis, bell peppers, tomatoes, onion, and garlic. Drizzle with olive oil and mix well to evenly coat the vegetables.
- In a small mixing bowl, whisk together the basil, thyme, oregano, salt, and pepper. Sprinkle the spice mixture over the vegetables and mix well to evenly distribute the spices.
- Pour the mixture into a 9x13 inch (23x33 cm) baking dish and spread it out evenly. Cover the dish with foil and place it in the oven.
- Bake for 45 minutes, then remove the foil and bake for an additional 15-20 minutes, or until the vegetables are tender and lightly browned.
- Remove the dish from the oven and let it cool for a few minutes. Sprinkle with fresh parsley, if desired, and serve hot.
