Vegetarian Sushi Rolls

Ingredients:

  • 2 cups sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 sheets nori
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • 1 carrot, grated
  • 1/4 cup pickled ginger
  • 1/4 cup wasabi
  • Soy sauce, for serving

Instructions:

  1. In a medium saucepan, combine the sushi rice with 2 cups of water and bring to a boil. Reduce the heat to low, cover, and cook for 18-20 minutes, or until the rice is tender and the water has been absorbed.
  2. In a small saucepan, heat the rice vinegar, sugar, and salt over low heat, stirring occasionally, until the sugar has dissolved.
  3. Pour the vinegar mixture over the cooked rice and stir to combine. Let the rice cool to room temperature.
  4. Lay a sheet of nori shiny-side down on a sushi mat. Spread a thin layer of rice over the nori, leaving a 1-inch border at the top. Arrange slices of avocado, cucumber, carrot, and pickled ginger on top of the rice.
  5. Roll up the sushi mat tightly, using the border of rice at the top to seal the roll. Repeat with the remaining ingredients to make 4 rolls total.
  6. Using a sharp knife, cut each roll into 8 pieces. Serve with wasabi and soy sauce on the side for dipping.
