Ingredients:
- 2 cups sushi rice
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 4 sheets nori
- 1 avocado, sliced

Instructions:
- In a medium saucepan, combine the sushi rice with 2 cups of water and bring to a boil. Reduce the heat to low, cover, and cook for 18-20 minutes, or until the rice is tender and the water has been absorbed.

- Lay a sheet of nori shiny-side down on a sushi mat. Spread a thin layer of rice over the nori, leaving a 1-inch border at the top. Arrange slices of avocado, cucumber, carrot, and pickled ginger on top of the rice.
- Roll up the sushi mat tightly, using the border of rice at the top to seal the roll. Repeat with the remaining ingredients to make 4 rolls total.
- Using a sharp knife, cut each roll into 8 pieces. Serve with wasabi and soy sauce on the side for dipping.
