
Vegetable Frittata
Ingredients:
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheddar cheese
Instructions:
- Preheat oven to 375°F. Heat the olive oil in a 9-inch oven-safe skillet over medium heat.
- Add the red bell pepper, onion, and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in the cherry tomatoes, spinach, salt, and black pepper and cook for an additional 2 minutes.
- In a large bowl, whisk together the eggs, milk, and cheese. Pour the egg mixture over the vegetables in the skillet.
- Cook for 2-3 minutes, or until the edges of the frittata begin to set. Transfer the skillet to the oven and bake for 10-12 minutes, or until the center of the frittata is set and the top is golden brown.
- Remove from the oven and let cool for a few minutes before slicing and serving.
