Ingredients:

  • 4 large bell peppers (red, yellow, or green)

  • 1 can of diced tomatoes
  • 1 cup of shredded cheese
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F. Cut the tops off of the bell peppers and remove the seeds and membranes. Set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened, about 5 minutes.
  3. Add the ground meat to the pan and cook until browned, about 8 minutes. Drain any excess fat if needed.
  4. Stir in the cooked rice, diced tomatoes, and salt and pepper to taste. Cook for an additional 5 minutes, until the mixture is heated through.
  5. Stuff the bell peppers with the meat and rice mixture, filling each pepper until they are overflowing. Place the stuffed peppers in a baking dish.
  6. Top each stuffed pepper with shredded cheese. Bake in the oven for 25-30 minutes, or until the cheese is melted and the peppers are tender.
  7. Garnish with chopped fresh herbs if desired and serve hot. Enjoy!
