Spinach and Feta Quiche

Ingredients:

  • 1 pie crust, pre-made or homemade
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon olive oil
  • 10 ounces fresh spinach, washed and chopped
  • 1 cup crumbled feta cheese
  • 5 large eggs
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic, and cook until the onions are soft and translucent, about 5 minutes.

  9. Let cool for 10 minutes before serving. Serve hot or cold.
