
Red Lentil Dahl
Ingredients:
- 1 cup red lentils
- 2 cups water
- 1 tablespoon coconut oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 1 teaspoon sea salt
- 1 can diced tomatoes
- 1 cup coconut milk
- 1/4 cup chopped fresh cilantro
Instructions:
- In a medium saucepan, combine the red lentils and water and bring to a boil. Reduce the heat to low and let the lentils simmer, covered, for 20-25 minutes, or until they are tender and have absorbed most of the liquid.

- Remove the pan from heat and stir in the chopped cilantro. Serve the dahl hot, garnished with additional cilantro and served over rice if desired.
