Red Lentil Dahl

Ingredients:

  • 1 cup red lentils
  • 2 cups water
  • 1 tablespoon coconut oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon sea salt
  • 1 can diced tomatoes
  • 1 cup coconut milk
  • 1/4 cup chopped fresh cilantro

Instructions:

  1. In a medium saucepan, combine the red lentils and water and bring to a boil. Reduce the heat to low and let the lentils simmer, covered, for 20-25 minutes, or until they are tender and have absorbed most of the liquid.
  2. Meanwhile, in a large pan, heat the coconut oil over medium heat. Add the onion and garlic and sauté until the vegetables are tender, about 5-7 minutes.
  3. Stir in the cumin, coriander, turmeric, cayenne pepper, and salt, and cook for an additional 2-3 minutes, or until fragrant.
  4. Add the diced tomatoes and coconut milk to the pan and bring the mixture to a simmer. Stir in the cooked lentils and continue to simmer for an additional 5-10 minutes, or until the sauce has thickened slightly.
  5. Remove the pan from heat and stir in the chopped cilantro. Serve the dahl hot, garnished with additional cilantro and served over rice if desired.
