Quinoa Stuffed Zucchini
Ingredients:
- 4 medium zucchinis
- 1 cup cooked quinoa
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 clove garlic, minced
- 1 cup diced tomatoes
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat the oven to 400°F. Line a baking sheet with parchment paper or lightly grease with cooking spray.
- Cut the zucchinis in half lengthwise and scoop out the seeds and flesh, leaving a 1/4-inch border around the edges. Chop the scooped-out flesh and set aside.
- In a large pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until the vegetables are tender, about 5-7 minutes.
- Add the chopped zucchini, bell pepper, and diced tomatoes to the pan and cook for an additional 5-7 minutes, or until the vegetables are tender and the sauce has thickened slightly.
- Stir in the cooked quinoa, parsley, Parmesan cheese, basil, oregano, salt, and pepper. Remove the pan from heat and let the mixture cool slightly.
- Fill each zucchini half with a generous scoop of the quinoa mixture and arrange on the prepared baking sheet.
- Bake the stuffed zucchinis for 20-25 minutes, or until they are tender and the filling is hot and bubbly.
- Serve the stuffed zucchinis hot, garnished with additional Parmesan cheese and parsley if desired.
