Quinoa Stuffed Zucchini

Ingredients:

  • 4 medium zucchinis
  • 1 cup cooked quinoa
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 clove garlic, minced
  • 1 cup diced tomatoes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper or lightly grease with cooking spray.
  2. Cut the zucchinis in half lengthwise and scoop out the seeds and flesh, leaving a 1/4-inch border around the edges. Chop the scooped-out flesh and set aside.
  3. In a large pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until the vegetables are tender, about 5-7 minutes.
  4. Add the chopped zucchini, bell pepper, and diced tomatoes to the pan and cook for an additional 5-7 minutes, or until the vegetables are tender and the sauce has thickened slightly.
  5. Stir in the cooked quinoa, parsley, Parmesan cheese, basil, oregano, salt, and pepper. Remove the pan from heat and let the mixture cool slightly.
  6. Fill each zucchini half with a generous scoop of the quinoa mixture and arrange on the prepared baking sheet.
  7. Bake the stuffed zucchinis for 20-25 minutes, or until they are tender and the filling is hot and bubbly.
  8. Serve the stuffed zucchinis hot, garnished with additional Parmesan cheese and parsley if desired.
