Falafel Wrap
Ingredients:
- 1 cup dried chickpeas
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lemon juice
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 3 tablespoons all-purpose flour
- Vegetable oil, for frying
- 4 pita breads
- Tahini sauce, for serving
- Tomatoes, sliced
- Cucumber, sliced
- Lettuce, shredded
Instructions:
1. Soak chickpeas overnight in a large bowl filled with water.
2. Drain chickpeas and transfer to a food processor. Add onion, garlic, parsley, cilantro, lemon juice, cumin, coriander, baking powder, salt, and cayenne pepper. Process until smooth.
3. Add flour to the chickpea mixture and pulse until combined.
4. Heat oil in a large saucepan over medium heat. Using a small cookie scoop or tablespoon, drop spoonfuls of the chickpea mixture into the hot oil and cook until golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
5. Warm pita breads in the oven or on a griddle. Spread tahini sauce on each pita, then fill with falafel, sliced tomatoes, cucumber, and shredded lettuce.
6. Serve hot and enjoy your delicious falafel wrap with a side of tahini sauce.
