Ingredients:

  • 1 cup soy chunks
  • 2 medium-sized potatoes, diced
  • 1 large onion, finely chopped
  • 2-3 garlic cloves, minced
  • 1 tsp ginger paste
  • 2-3 green chilies, finely chopped
  • 2-3 tomatoes, finely chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala powder Salt to taste
  • 2 tbsp oil
  • Fresh cilantro leaves, chopped for garnish

Instructions:

  1. Start by soaking the soy chunks in hot water for about 10-15 minutes or until they become soft and plump. Then drain the water and rinse them thoroughly with cold water.
  2. Heat oil in a pan and add cumin seeds. Once they start to splutter, add onions, garlic, ginger paste, and green chilies. Sauté until the onions turn golden brown.
  3. Add chopped tomatoes, salt, turmeric powder, red chili powder, and coriander powder to the pan. Mix everything well and cook until the tomatoes become soft and mushy.
  4. Add diced potatoes and soaked soy chunks to the pan. Mix well and add some water. Cover the pan with a lid and let it cook for about 15-20 minutes or until the potatoes are cooked through and the gravy has thickened.
  5. Finally, sprinkle garam masala powder over the dish and garnish with fresh cilantro leaves.
  6. Serve hot with rice or roti and enjoy your delicious Soyan Chalna!
