Ingredients:

  • 1 lb. boneless, skinless chicken breast
  • 1/4 cup almond flour
  • 1 tsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. dried basil
  • Salt and pepper, to taste
  • 2 tbsp. olive oil
  • 1 head cauliflower, chopped into florets
  • 1/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, mix together the almond flour, paprika, garlic powder, basil, salt, and pepper. Dredge the chicken breast in the mixture, coating well on both sides.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breast and cook for 6-7 minutes on each side, or until golden brown and cooked through.
  4. Place the chicken on the prepared baking sheet and bake for 10-12 minutes, or until the internal temperature reaches 165°F (74°C).
  5. In a large saucepan, cook the cauliflower florets in boiling water until tender, about 8-10 minutes. Drain and set aside.
  6. In a blender or food processor, puree the cooked cauliflower with the heavy cream and Parmesan cheese until smooth.
