Grilled Chicken and Vegetable Salad

This grilled chicken and vegetable salad is a delicious and healthy meal that is perfect for a light lunch or dinner. The tender chicken and crisp vegetables are paired with a tangy vinaigrette, making it a flavorful and satisfying meal.

Ingredients:
  • 2 boneless, skinless chicken breasts
  • 1 yellow onion, sliced
  • 2 bell peppers, sliced
  • 2 zucchini, sliced
  • 1 tsp. olive oil
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 4 cups mixed greens
  • 1/4 cup balsamic vinegar
  • 2 tbsp. olive oil
  • 1 tsp. dijon mustard
  • 1 clove garlic, minced
Instructions:
  1. Preheat a grill or grill pan to medium-high heat.
  2. Brush the chicken, onion, bell peppers, and zucchini with the olive oil and sprinkle with salt and pepper. Grill the chicken and vegetables until the chicken is cooked through and the vegetables are tender and slightly charred, about 5-7 minutes per side.
  3. In a small bowl, whisk together the balsamic vinegar, olive oil, dijon mustard, and garlic to make the vinaigrette.
  4. Arrange the mixed greens on a large serving platter. Top with the grilled chicken and vegetables and drizzle with the vinaigrette. Serve immediately.
