Gluten-Free Entrees

These gluten-free entrees are sure to please, and they'll help you stick to your dietary restrictions without feeling deprived.

Gluten-Free Chicken Parmesan

Ingredients:
  • 4 boneless, skinless chicken breasts
  • 1/2 cup gluten-free flour
  • 2 large eggs, beaten
  • 1 cup gluten-free breadcrumbs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil
  • 1 jar marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil (optional)
Instructions:
  1. Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
  2. In three separate shallow dishes, place the flour in the first dish, the beaten eggs in the second dish, and the breadcrumbs mixed with salt and pepper in the third dish.
  3. Dredge each chicken breast in the flour, shaking off any excess, then dip in the eggs and finally coat in the breadcrumb mixture, pressing the breadcrumbs firmly onto the chicken.
  4. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 4 minutes per side.
  5. Place the chicken on the prepared baking sheet. Spoon marinara sauce over each chicken breast and top with mozzarella and Parmesan cheese.
  6. Bake in the oven for 10-12 minutes, or until the cheese is melted and bubbly. Serve hot, garnished with fresh basil, if desired.
