Delicious Slow Cooker Meals

Here are two of our favorite slow cooker meals that are sure to please even the pickiest of eaters:
Slow Cooker Beef Stew
Ingredients:
- 2 pounds of beef stew meat, cut into 1-inch cubes
- 3 medium potatoes, peeled and chopped
- 2 medium carrots, peeled and sliced
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 1 cup of beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
Instructions:
- In a slow cooker, combine the beef, potatoes, carrots, onion, and garlic.
- In a small bowl, whisk together the beef broth, tomato paste, thyme, rosemary, salt, and pepper. Pour this mixture over the beef and vegetables in the slow cooker.
- Cover and cook on low for 8 hours, or until the beef is tender and the vegetables are soft.
- Serve hot with crusty bread or over a bed of mashed potatoes. Enjoy!
Slow Cooker Chicken & Vegetables
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 medium zucchinis, sliced
- 2 medium yellow squash, sliced
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 1 cup of chicken broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
Instructions:
- In a slow cooker, combine the chicken, zucchinis, yellow squash, onion, and garlic.
- In a small bowl, whisk together the chicken broth, basil, oregano, salt, and pepper. Pour this mixture over the chicken and vegetables in the slow cooker.
- Cover and cook on low for 6-8 hours, or until the chicken is fully cooked and the vegetables are tender.
- Serve hot with rice or a side of crusty bread. Enjoy!
