Classic Comfort Foods

Ingredients:

  • 1 lb. ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz.)
  • 1 cup beef broth
  • 1 tbsp. tomato paste
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • Salt and pepper, to taste
  • 8 oz. elbow macaroni
  • 1 cup grated cheddar cheese

Instructions:

  1. In a large saucepan, cook the ground beef over medium heat until browned. Drain the fat.
  2. Add the onion and garlic to the saucepan and cook until the onion is soft and translucent, about 5 minutes.
  3. Stir in the diced tomatoes, beef broth, tomato paste, basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 10 minutes.
  4. Cook the macaroni according to the package instructions until al dente. Drain and set aside.
  5. Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  6. Spread half of the macaroni in the bottom of the prepared baking dish. Pour the beef mixture over the macaroni, then sprinkle with the grated cheddar cheese.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly. Serve hot.
