Classic Comfort Foods
Ingredients:
- 1 lb. ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz.)
- 1 cup beef broth
- 1 tbsp. tomato paste
- 1 tsp. dried basil
- 1 tsp. dried oregano
- Salt and pepper, to taste
- 8 oz. elbow macaroni
- 1 cup grated cheddar cheese
Instructions:
- In a large saucepan, cook the ground beef over medium heat until browned. Drain the fat.
- Add the onion and garlic to the saucepan and cook until the onion is soft and translucent, about 5 minutes.
- Stir in the diced tomatoes, beef broth, tomato paste, basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 10 minutes.
- Cook the macaroni according to the package instructions until al dente. Drain and set aside.
- Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- Spread half of the macaroni in the bottom of the prepared baking dish. Pour the beef mixture over the macaroni, then sprinkle with the grated cheddar cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly. Serve hot.
