Gluten-Free Entrees

Gluten-Free Chicken Parmesan
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup gluten-free flour
- 2 large eggs, beaten
- 1 cup gluten-free breadcrumbs
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup olive oil
- 1 jar marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil (optional)
Instructions:
- Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
- In three separate shallow dishes, place the flour in the first dish, the beaten eggs in the second dish, and the breadcrumbs mixed with salt and pepper in the third dish.
- Dredge each chicken breast in the flour, shaking off any excess, then dip in the eggs and finally coat in the breadcrumb mixture, pressing the breadcrumbs firmly onto the chicken.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 4 minutes per side.
- Place the chicken on the prepared baking sheet. Spoon marinara sauce over each chicken breast and top with mozzarella and Parmesan cheese.
- Bake in the oven for 10-12 minutes, or until the cheese is melted and bubbly. Serve hot, garnished with fresh basil, if desired.
