Thai Coconut Curry Soup

Ingredients:

  • 2 tablespoons of vegetable oil
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of Thai red curry paste
  • 1 can of coconut milk
  • 1 cup of chicken broth
  • 1 cup of chopped carrots
  • 1 cup of chopped red bell pepper
  • 1 cup of chopped mushrooms
  • 1 tablespoon of sugar
  • 1 tablespoon of fish sauce
  • 1 tablespoon of lime juice
  • 1 cup of chopped cilantro
  • 1 cup of chopped green onions

Instructions:

  1. In a large saucepan, heat the oil over medium heat. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  2. Stir in the curry paste and cook for 1 minute.
  3. Add the coconut milk, chicken broth, carrots, red bell pepper, mushrooms, sugar, fish sauce, and lime juice. Bring to a boil.
  4. Reduce the heat and simmer for 15 minutes, or until the vegetables are tender.
  5. Stir in the cilantro and green onions just before serving.
