Split Pea Soup
Ingredients:
- 1 pound dried split peas
- 1 large onion, chopped
- 2 large carrots, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 1 ham bone or 1 cup diced ham
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
Instructions:
- Rinse the split peas in a colander and pick out any small stones or debris.
- In a large pot, heat a tablespoon of oil over medium heat. Add the onion, carrots, and celery and sauté until softened, about 5 minutes.
- Add the garlic and cook for another minute until fragrant.

- Taste the soup and adjust seasoning as needed. If the soup is too thick, add more broth or water to thin it out to your desired consistency.
