Split Pea Soup

Ingredients:

  • 1 pound dried split peas
  • 1 large onion, chopped
  • 2 large carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 ham bone or 1 cup diced ham
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Instructions:

  1. Rinse the split peas in a colander and pick out any small stones or debris.
  2. In a large pot, heat a tablespoon of oil over medium heat. Add the onion, carrots, and celery and sauté until softened, about 5 minutes.
  3. Add the garlic and cook for another minute until fragrant.
  4. Add the split peas, broth, ham bone or diced ham, bay leaf, thyme, salt, black pepper, and cayenne pepper to the pot. Stir to combine.
  5. Bring the soup to a boil, then reduce heat to low and cover the pot. Let the soup simmer for about 1 1/2 to 2 hours, stirring occasionally, until the split peas are very soft and have broken down into a thick puree.
  6. Remove the bay leaf and ham bone from the soup. If using diced ham, leave it in the soup. Use an immersion blender or transfer the soup in batches to a blender or food processor and puree until smooth.
  7. Taste the soup and adjust seasoning as needed. If the soup is too thick, add more broth or water to thin it out to your desired consistency.
  8. Serve the split pea soup hot with crusty bread or crackers, if desired.
