Gazpacho

Ingredients:

  • 4 large ripe tomatoes, cored and diced
  • 1 large cucumber, peeled and diced
  • 1 red bell pepper, cored and diced
  • 1 yellow bell pepper, cored and diced
  • 1 large red onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 cups tomato juice
  • 1/2 cup fresh breadcrumbs
  • 1/4 cup fresh basil, chopped

Instructions:

  1. In a large bowl, combine the tomatoes, cucumber, red and yellow bell peppers, red onion, garlic, red wine vinegar, olive oil, lemon juice, salt, and pepper.
  2. Pour the mixture into a blender or food processor, add the tomato juice and blend until smooth.
  3. Pour the mixture into a large bowl and stir in the breadcrumbs and basil.
  4. Cover the bowl and refrigerate for at least 2 hours or overnight to allow the flavors to meld together.
  5. Stir the gazpacho before serving. Serve chilled with crusty bread, if desired.
