Miso Soup

Ingredients:

  • 4 cups of water
  • 3 inch piece of kombu seaweed
  • 1/4 cup bonito flakes
  • 1/2 cup of miso paste (soybean, rice, or mixed miso paste)
  • 1/2 cup diced tofu
  • 1/4 cup sliced green onions
  • 1/4 cup sliced shiitake mushrooms

Instructions:

  1. In a medium saucepan, bring 4 cups of water and the kombu to a boil. Remove the kombu and add the bonito flakes. Reduce heat to low and let simmer for 5 minutes.
  2. Strain the broth through a fine mesh strainer into a clean saucepan, discarding the bonito flakes and kombu.
  3. In a separate bowl, mix the miso paste with a ladleful of the hot broth until smooth.
  4. Add the miso mixture back into the saucepan with the remaining broth, stirring well to combine.
  5. Add the tofu, green onions, and mushrooms to the soup, and heat until everything is warmed through.
  6. Serve hot in bowls and garnish with additional green onions if desired.
