Miso Soup
Ingredients:
- 4 cups of water
- 3 inch piece of kombu seaweed
- 1/4 cup bonito flakes
- 1/2 cup of miso paste (soybean, rice, or mixed miso paste)
- 1/2 cup diced tofu
- 1/4 cup sliced green onions
- 1/4 cup sliced shiitake mushrooms
Instructions:
- In a medium saucepan, bring 4 cups of water and the kombu to a boil. Remove the kombu and add the bonito flakes. Reduce heat to low and let simmer for 5 minutes.
- Strain the broth through a fine mesh strainer into a clean saucepan, discarding the bonito flakes and kombu.
- In a separate bowl, mix the miso paste with a ladleful of the hot broth until smooth.
- Add the miso mixture back into the saucepan with the remaining broth, stirring well to combine.
- Add the tofu, green onions, and mushrooms to the soup, and heat until everything is warmed through.
- Serve hot in bowls and garnish with additional green onions if desired.
