Gumbo

Ingredients:

  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 3 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 pound Andouille sausage, sliced
  • 4 cups chicken broth
  • 2 cups diced tomatoes
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried marjoram
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 2 bay leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup chopped green onions
  • 2 tablespoons chopped fresh parsley
  • 1 cup uncooked white rice

Instructions:

  1. In a large heavy-bottomed pot or Dutch oven, heat the oil over medium heat. Stir in the flour and cook, stirring constantly, until the mixture turns a deep golden brown, about 20 minutes. This is the roux, the base of the gumbo.
  2. Add the onion, bell pepper, celery, and garlic to the roux and cook, stirring often, until the vegetables are soft, about 10 minutes. Stir in the sausage and cook until browned, about 5 minutes.
  3. Gradually stir in the chicken broth, tomatoes, Worcestershire sauce, thyme, basil, oregano, marjoram, paprika, cayenne pepper, bay leaves, salt, and black pepper. Bring the mixture to a boil, reduce the heat to low, and simmer for 30 minutes.
  4. Stir in the chicken, green onions, and parsley, and simmer until the chicken is cooked through, about 15 minutes. Serve the gumbo over the rice.
