Instructions:

  2. In a separate large mixing bowl, toss together sweet potato, coconut oil, paprika, garlic powder, onion powder, salt, and pepper. Spread sweet potato mixture out in a single layer on a baking sheet and roast in the oven at 400°F for 20-25 minutes, or until tender and golden brown.
  3. While sweet potatoes are roasting, heat a separate non-stick skillet over medium heat. Add ghee, red onion, and bell pepper, and cook until softened, about 3-5 minutes.
  4. Crack eggs into the same skillet and cook until set, about 3-5 minutes. Remove from heat and set aside.
  5. To assemble the breakfast, divide sweet potatoes, sausage, egg mixture, and red onion and bell pepper mixture between four plates. Serve immediately.
