Ingredients:

  • 1 tbsp olive oil
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup chopped kale
  • 6 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled goat cheese

Instructions:

  1. Preheat oven to 375°F. Heat olive oil in a large oven-safe skillet over medium heat. Add red bell pepper, onion, and garlic and cook until softened, about 3-5 minutes.
  2. Stir in zucchini and kale and cook until tender, about 3-5 minutes. Remove from heat and set aside.
  3. In a large mixing bowl, whisk together eggs, almond milk, salt, and pepper. Pour egg mixture over vegetable mixture in the skillet.
  4. Sprinkle crumbled goat cheese over the top of the frittata. Bake in the oven for 20-25 minutes, or until set and golden brown.
  5. Remove from oven and let cool for 5 minutes. Slice and serve immediately.
