Vegan protein pancakes

Start your day with a protein-packed breakfast that's both filling and delicious. These vegan protein pancakes are the perfect way to fuel your body and satisfy your sweet tooth at the same time.

Ingredients:

  • 1 cup whole wheat flour
  • 2 scoops vegan protein powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsweetened almond milk
  • 1 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • Optional: your favorite fruit and syrup for topping

Instructions:

  1. In a large mixing bowl, whisk together the flour, protein powder, baking powder, and salt.
  2. In a separate bowl, whisk together the almond milk, melted coconut oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined (a few lumps are okay).
  4. Heat a non-stick pan or griddle over medium heat. Scoop 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
  5. Serve with your favorite fruit and syrup, if desired.
