Vegan protein pancakes
Start your day with a protein-packed breakfast that's both filling and delicious. These vegan protein pancakes are the perfect way to fuel your body and satisfy your sweet tooth at the same time.
Ingredients:
- 1 cup whole wheat flour
- 2 scoops vegan protein powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup unsweetened almond milk
- 1 tbsp coconut oil, melted
- 1 tsp vanilla extract
- Optional: your favorite fruit and syrup for topping
Instructions:
- In a large mixing bowl, whisk together the flour, protein powder, baking powder, and salt.
- In a separate bowl, whisk together the almond milk, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined (a few lumps are okay).
- Heat a non-stick pan or griddle over medium heat. Scoop 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
- Serve with your favorite fruit and syrup, if desired.
