Savory Breakfast Bowls

Ingredients:

  • 1 sweet potato, peeled and diced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 cup black beans, drained and rinsed
  • 1 avocado, diced
  • 2 large eggs
  • 1 tbsp butter
  • 1/4 cup salsa
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup plain Greek yogurt
  • 1/4 cup chopped cilantro

Instructions:

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, toss together sweet potato, olive oil, salt, and pepper. Spread sweet potato out in a single layer on prepared baking sheet and roast in the oven for 20-25 minutes, or until tender and golden brown.
  3. While sweet potatoes are roasting, heat a large non-stick skillet over medium heat. Add black beans and avocado, and cook until heated through, about 3-5 minutes.
  4. Crack eggs into the skillet and cook until set, about 3-5 minutes. Remove from heat and set aside.
  5. In a separate small saucepan, melt butter over medium heat. Stir in salsa and remove from heat.
  6. To assemble the breakfast bowls, divide sweet potatoes, black bean and avocado mixture, and eggs between two bowls. Top each bowl with shredded cheddar cheese, a dollop of Greek yogurt, a drizzle of salsa mixture, and a sprinkle of chopped cilantro. Serve immediately.
