Scones for All Occasions
Ingredients:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/4 tsp salt
- 6 tbsp unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 cup heavy cream
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or silicone baking mat.
- In a large bowl, whisk together the flour, baking powder, and salt. Using a pastry cutter or your fingertips, cut in the butter until the mixture resembles coarse crumbs.
- Stir in the sugar.
- In a separate bowl, whisk together the egg, heavy cream, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined.
- Turn the dough out onto a lightly floured surface and gently knead until it comes together. Roll the dough out into a 1-inch thick round.
- Using a sharp knife or a biscuit cutter, cut the dough into 8 wedges. Place the scones on the prepared baking sheet and bake for 18-20 minutes, or until lightly golden brown on the edges.
- Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
