Ingredients

  • Puff Pastry:
    • 2 cups all-purpose flour
    • 1 teaspoon salt
    • 1 cup unsalted butter, chilled and diced
    • 1/2 cup cold water
  • Filling:

    • 1/2 cup sugar

    • 1 large egg, beaten

Instructions

  1. In a large bowl, whisk together the flour and salt. Add the chilled and diced butter and use a pastry cutter or your fingers to incorporate the butter into the flour mixture until it resembles coarse crumbs.
  2. Add the cold water, 1 tablespoon at a time, until the dough comes together into a ball.
  3. Wrap the dough in plastic wrap and refrigerate for at least 1 hour, or up to 2 days.
  4. Preheat the oven to 400°F and line a large baking sheet with parchment paper.
  5. In a small bowl, whisk together the sliced almonds, sugar, cinnamon, and nutmeg.
  6. On a lightly floured surface, roll out the chilled puff pastry dough into a large rectangle, about 1/8 inch thick.
  7. Brush the beaten egg over the surface of the dough, leaving a 1/2 inch border around the edges.
  8. Sprinkle the almond mixture evenly over the surface of the dough, pressing it down lightly to help it adhere.
  9. Starting with the long edge closest to you, roll the dough tightly into a cylinder, pressing down gently to seal the edges.
  10. Slice the cylinder into 1 inch rounds and place them cut-side up on the prepared baking sheet.
  11. Bake for 20-25 minutes, or until the pastries are puffed and golden brown.
  12. Remove from the oven and let cool on the baking sheet for 5 minutes before serving.
