Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk

Instructions

  1. Preheat the oven to 350°F and grease a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes.
  4. Add in the eggs, one at a time, beating well after each addition.
  5. Stir in the vanilla extract.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the milk and mixing until just combined.
  7. Fold in any optional additions, such as nuts, dried fruit, or chocolate chips.
  8. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let cool completely in the pan before slicing and serving.
