Flaky Pie Crusts

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp granulated sugar
  • 1 cup unsalted butter, chilled and cut into small pieces
  • 4-6 tbsp ice water

Instructions:

  1. In a large bowl, whisk together the flour, salt, and sugar until well combined.
  2. Add the chilled butter pieces and use a pastry cutter or your fingertips to cut the butter into the flour mixture until the mixture resembles coarse crumbs.
  3. Slowly add the ice water, 1 tablespoon at a time, until the dough just comes together.
  4. Turn the dough out onto a lightly floured surface and knead briefly until it forms a smooth ball.
  5. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour, or until chilled.
  6. On a lightly floured surface, roll out one disk of dough to a 1/4-inch thickness. Repeat with the second disk of dough.
  7. Line a 9-inch pie dish with one of the rolled-out crusts. Fill with desired pie filling and top with the second rolled-out crust. Use a sharp knife or kitchen shears to trim the edges and flute the edges, if desired.
