Delicious Danish Pastries
Ingredients:
- 1 cup warm milk (110°F)
- 2 1/4 tsp active dry yeast
- 1/2 cup sugar
- 1 tsp salt
- 2 large eggs
- 5 1/2 - 6 cups all-purpose flour
- 1 cup unsalted butter, chilled and cut into small pieces
- 1 egg yolk
- 1 tbsp heavy cream
Instructions:
- In a large bowl, combine the warm milk and yeast. Let sit for 5 minutes, until the yeast is frothy.
- Add the sugar, salt, and eggs to the bowl and whisk to combine.
- Add the flour, 1 cup at a time, until a soft dough forms. Turn the dough out onto a lightly floured surface and knead for 5 minutes, until smooth.
- Place the dough in a greased bowl, cover, and let rise in a warm, draft-free place for 1 hour, or until doubled in size.
- On a lightly floured surface, roll out the dough to a large rectangle, about 1/4-inch thick.
- Place the chilled butter pieces in the center of the dough rectangle and fold the dough over the butter, sealing the edges to form a package.
- Roll out the dough again to a large rectangle and fold it into thirds, like a letter. Repeat the rolling and folding process two more times, wrapping the dough in plastic wrap and refrigerating for 30 minutes between each turn.
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cut the dough into desired shapes, such as rounds or triangles, and place them on the prepared baking sheet.
- In a small bowl, whisk together the egg yolk and heavy cream. Brush the mixture over the tops of the dough pieces.
- Bake for 15-20 minutes, or until golden brown and puffed.
